UBE ICE CREAM

What do you need?

Making your own ube ice cream at home is ridiculously very easy. All you need is ube jam, ube extract, condensed milk, heavy cream, and vanilla.

Ingredients

  • 1 300 ml (10 oz) can condensed milk
  • 150 grams (5 oz) ube jam
  • 1 20 ml bottle (about 4 teaspoons) ube extract
  • 1 teaspoon vanilla extract
  • 2 cups (500 ml) heavy cream, whipped to medium/stiff peaks

Instructions

  1. Steam grated ube for 10 to 15 minutes. 
  2. Remove and mash with a fork.
  3. Combine whole milk and icing sugar in a boul.  Stir until sugar dissolves and milk comes to a bare simmer.
  4. Mix in steamed ube and heavy whipping cream.
  5. Using a stand or stick blender, puree the mixture until smooth.
     
  6. Then pour the mixture through a sieve to remove remaining lumps of ube.
  7. Discard solids.
  8. Cover and place in refrigerator for at least 2 to 3 hours.
  9. Place frozen bowl on base of ice cream maker and turn it on. Pour chilled ube mixture into the frozen bowl. Churn for 10 to 15 minutes.
  10. Transfer ice cream to a container with a lid. Cover and freeze for a couple of hours before serving.
